Reeses Fluffernutter Cupcakes

Last night was our new team dinner for the 2012 Fall Cheerleading Season. Since I always feel compelled to contribute when a dinner is served, I decided to make some cupcakes. Specifically, I tried to make 2 kinds of cupcakes. Did you notice the word tried? Yeah, one batch ended up all over my kitchen. I managed to salvage enough batter, only to have it not bake correctly, and then only to realize that I have used that same chocolate cupcake recipe several times with the same results.

Anywho, back to the cupcakes that actually came out right.

Reeses Fluffernutter Cupcakes

Makes 24 cupcakes.

For the Peanut Butter Cupcakes
1 white cake mix
3/4 c. water
1/3 c. oil
4 eggs
1/3 c. creamy peanut butter
1/3 c. sour cream
24 reeses peanut butter cups

For the Marshmallow Butter Cream
1 c. butter
1 (7 oz.) jar marshmallow fluff
3 c. powdered sugar
1 tsp. vanilla
1/8 tsp. salt


For the Peanut Butter Cupcakes
1. Preheat oven to 350. 
2. In a mixing bowl combine water, oil, and eggs. Add the dry cake mix and beat for 1 minute on low. Add the peanut butter and sour cream and beat on medium for 2 more minutes. 
3.  Place an unwrapped peanut butter cup into the bottom of each cupcake liner.
4.  Fill cupcake liners 3/4 full and bake for 18 minutes. 
5. Cool completely. Top with frosting and sprinkles.

For the Fluff Buttercream
1. In a mixing bowl beat the butter, fluff, vanilla, and salt until creamy. 
2. Slowly add the powdered sugar until completely mixed in.
